Classic American pancakes — thin, delicate, and golden. Perfect for breakfast with berries, sugar, or your favorite topping.

  1. Add flour, eggs, milk, sunflower oil, and a pinch of salt to a bowl or large pitcher. Whisk well until you have a smooth batter with no lumps. If you have time, let the batter rest for 30 minutes — this will make your pancakes more delicate. If you're in a hurry, you can cook them right away.
  2. Heat a non-stick skillet (or thin crêpe pan) over medium heat. Lightly brush it with oil using a kitchen towel. When the pan is well preheated, pour the batter in a thin layer and cook the pancake for 1 minute on each side until golden brown. Transfer finished pancakes to a plate and keep them in a warm place.
  3. Serve the pancakes hot with sugar, berries, or your favorite topping. Cooled pancakes can be stacked between sheets of parchment paper, wrapped in plastic wrap, and frozen for up to 2 months.
