Beaver Tails

Canadian street dessert: fried pastries made from yeast dough shaped like beaver tails and coated with cinnamon sugar.

  1. Pour warm water into a mixer bowl, add a generous pinch of sugar and yeast. Let stand until foamy.
  2. Add ½ cup sugar, warm milk, melted butter, eggs, and salt, and beat until smooth.
  3. Using a dough hook attachment, gradually incorporate flour until you have a smooth, slightly sticky dough.
  4. Transfer the dough to a bowl, cover with plastic wrap, and let rise for 1.5 hours.
  5. Divide the dough into 12 portions and roll out into long ovals approximately 6 mm thick, resembling beaver tails.
  6. Heat oil in a deep saucepan to 175°C. Carefully lower the dough pieces and fry for 30–45 seconds on each side until golden brown.
  7. Drain on paper towels and coat with cinnamon sugar (or sugar with lemon juice).
