Philippine Beef Asado

Succulent beef braised in an aromatic tomato and soy sauce with garlic and bay leaf — a Filipino classic that is impossible to resist. Rich flavor and tender meat will make this dish the star of any table.

  1. Mix the beef with crushed pepper, soy sauce, vinegar, bay leaf, juice from half a lemon, and tomato sauce. Stir well until the meat is evenly coated with the marinade, and let it rest for at least 30 minutes.
  2. Transfer the marinated beef along with all the marinade to a heavy-bottomed pot. Pour in water and bring to a boil over medium heat.
  3. Add the beef bouillon concentrate and stir. Cover with a lid and simmer on low heat for 40 minutes.
  4. Turn the meat pieces over, add tomato paste, and continue cooking on low heat until the beef becomes tender. When the meat is done, remove it from the pot and set aside, reserving the sauce.
  5. Heat olive oil in a skillet. Sauté the onion and garlic until the onion is soft and lightly golden, stirring occasionally. Leave 3 tablespoons of oil in the skillet.
  6. Pour the sauce from braising the beef into the skillet with the onion and garlic. Bring to a boil, then add the meat and cook together for 2 minutes.
  7. Add butter and let it melt. Continue cooking over medium heat until the sauce reduces by approximately half and becomes thick and rich. Serve hot with boiled rice.
