Bajan — Barbadian Salt Bread

Soft yeast rolls from Barbados — the foundation of local sandwiches. A simple recipe with a golden crust.
Ingredients
- 6 cup Wheat flour
- 2.5 cup Warm water
- 2 tsp Dry yeast
- 2 tsp Sugar
- 1 tsp Salt
- 2 tbsp Vegetable oil
Instructions
- Sift half of the flour and mix with salt and yeast in a large bowl. Gradually add warm water until a stiff dough forms. Sprinkle with sifted flour until you reach a consistency that is comfortable for kneading.
- Lightly flour the work surface and knead the dough for 10 minutes until smooth and elastic. Place in an oiled bowl and leave in a warm place for 40–50 minutes until doubled in size.
- Preheat the oven to 220 °C.
- Divide the dough into 12 portions, roll into balls the size of a fist, and place on a greased baking sheet. Leave in a warm place again for approximately 40 minutes until doubled.
- Bake in the center of the oven for 25–30 minutes until golden brown — ready rolls will sound hollow when tapped.
