Bajan — Barbadian Salt Bread

Soft yeast rolls from Barbados — the foundation of local sandwiches. A simple recipe with a golden crust.

  1. Sift half of the flour and mix with salt and yeast in a large bowl. Gradually add warm water until a stiff dough forms. Sprinkle with sifted flour until you reach a consistency that is comfortable for kneading.
  2. Lightly flour the work surface and knead the dough for 10 minutes until smooth and elastic. Place in an oiled bowl and leave in a warm place for 40–50 minutes until doubled in size.
  3. Preheat the oven to 220 °C.
  4. Divide the dough into 12 portions, roll into balls the size of a fist, and place on a greased baking sheet. Leave in a warm place again for approximately 40 minutes until doubled.
  5. Bake in the center of the oven for 25–30 minutes until golden brown — ready rolls will sound hollow when tapped.
