Asado (Argentine Grilled Meat)

Argentine barbecue: an assortment of beef cuts and sausages, slowly cooked over wood-fired coals. Served with chimichurri sauce.

  1. Build a wood fire in the grill and let it burn down to coals.
  2. Season the beef pieces generously with salt on all sides.
  3. Place the meat on the grate: the thickest pieces farther from the coals. Add the chorizo and morcilla later, once the beef has browned.
  4. Cook, turning occasionally, until your desired doneness: ribs may take up to 2 hours, thinner cuts cook faster.
  5. Let the meat rest for about 10 minutes, then slice. Serve with chimichurri sauce and grilled vegetables.
