Arnhem Girls (Puff Pastry Cookies)

A Dutch crispy cookie made from puff pastry with caramelized spiced sugar, cinnamon, and cardamom. A classic from the city of Arnhem.
Ingredients
- 5 pcs Puff pastry (sheets)
- 100 g Vanilla sugar
- 0.5 tsp Ground cinnamon
- 0.5 tsp Cardamom
- 1 tsp Lime zest
- to taste Egg for glazing
Instructions
- Thaw the puff pastry. Dust the work surface with flour, stack the sheets together, and roll with a rolling pin until five sheets become as thin as one.
- Using a round or oval cookie cutter, cut out as many cookies as possible, using the dough economically.
- Mix the vanilla sugar with cinnamon, cardamom, and lime zest. Clear the flour from the work surface and sprinkle it with the sugar mixture.
- Brush the dough with beaten egg, dip into the sugar mixture, and press lightly so the sugar adheres.
- Place the cookies on a baking sheet lined with parchment paper and let the dough rest for 20–25 minutes—this will make it even crispier.
- Preheat the oven to 180 °C and bake the cookies for about 25 minutes until golden brown and the sugar is beautifully caramelized.
