Apam Balik (Malaysian Peanut Pancake)

A thick Malaysian pancake with crispy edges and a filling of peanut butter, sugar, and creamed corn. A popular street dessert.

  1. Mix milk, oil, and eggs together. Sift flour, baking powder, and salt over the mixture. Stir well until you have a smooth batter.
  2. Pour some batter onto a pan and spread it thinly around the edges. Cover for 30–60 seconds until small bubbles appear.
  3. Top the pancake with butter, creamed corn, crushed peanuts, and sugar. When the bottom is golden brown, fold the pancake in half.
  4. Cut into wedges. Best served warm.
