Figgy Duff

A Canadian holiday dessert from Newfoundland—a delicate spiced pudding with raisins that is boiled in a cloth bag and served hot with aromatic sauce. This classic treat warms you on cold days.
Ingredients
- 480 g All-purpose flour
- 100 g Brown sugar
- 2 tsp Baking powder
- 1 tsp Ground ginger
- 1 tsp Allspice
- 1 tsp Cinnamon
- 240 g Raisins
- 80 g Melted butter
- 120 ml Molasses
- 1 tbsp Water
Instructions
- In a medium-sized bowl, sift the flour and add the brown sugar, baking powder, ginger, allspice, and cinnamon. Whisk the dry ingredients together thoroughly.
- Add the raisins to the dry mixture and stir well until the raisins are evenly coated with the flour mixture.
- Pour in the melted butter, molasses, and water. Using a wooden spoon, mix until you have a smooth batter. Gather the batter into a tight ball. Place the ball in a cotton pudding bag and tie it so that approximately 1 inch (2.5 cm) of free space remains inside for the pudding to expand during cooking.
- Boil the pudding in a suitable pot of water for 1.5 hours, monitoring the water level (it should cover the bag).
- When the pudding becomes firm, carefully remove it from the boiling water and let it cool slightly. Gently open the bag and remove the pudding.
- Slice the pudding into portions like you would a regular cake. Serve hot with your favorite sauce: classic molasses, butter rum sauce, or traditional Molasses Coady sauce (molasses, butter, and water in equal proportions, warmed together).
