Sichuan-Style Long Beans

Crispy long beans wok-fried with fiery spices and sesame aroma—a classic Chinese dish prepared in minutes. Spicy, fragrant, and incredibly delicious.

  1. Rinse and pat dry the long beans. Break or cut the dried chili peppers into pieces, removing the seeds if you prefer a less spicy dish.
  2. Heat the peanut oil in a wok or large skillet over high heat. If you don't have a wok, use a deep skillet at least 30 cm in diameter with high sides.
  3. Add the dried chili peppers and Sichuan peppercorns to the hot oil. Stir-fry for 30 seconds, constantly stirring, so the spices release their aroma and don't burn.
  4. Add the beans and stir-fry over high heat for 4–5 minutes, constantly stirring. The beans should soften, become slightly wrinkled, and char lightly at the edges.
  5. Season with salt, sugar, and soy sauce. Toss thoroughly for another 1–2 minutes.
  6. Remove from heat, drizzle with sesame oil, and toss quickly once more. Serve hot.
