Kibbeh Nayyeh (Lebanese Raw Lamb)

Kibbeh nayyeh is the crown jewel of Lebanese meze — silky-smooth raw lamb blended with fine bulgur, aromatic spices, and fresh herbs, served with a drizzle of extra-virgin olive oil. This dish demands the freshest possible lamb and is traditionally prepared and consumed the same day. It is rich, earthy, and deeply satisfying — a true celebration of simplicity and quality.
Ingredients
- 500 g very fresh lean lamb leg or tenderloin, sinew and fat fully removed
- 80 g fine bulgur wheat (#1 grade)
- 1 pcs small white onion
- 10 g fresh basil leaves
- 10 g fresh flat-leaf parsley
- 1 tsp dried marjoram
- 1 tsp ground allspice (Lebanese 7-spice blend preferred)
- 0.5 tsp ground cinnamon
- 0.5 tsp ground black pepper
- 1.5 tsp fine sea salt
- 1 pinch cayenne pepper
- 60 ml ice-cold water
- 4 tbsp extra-virgin olive oil
- 1 pinch dried chilli flakes
- fresh white or pita bread
- raw white onion slices
- fresh mint sprigs
- green olives
Instructions
- Food safety first: purchase the lamb from a trusted butcher the same morning you plan to serve this dish. Ask the butcher to confirm it is suitable for raw consumption. Keep it refrigerated at below 4 °C at all times until you begin preparation. Trim away every trace of fat, sinew, and membrane — only pure lean meat should remain. Cut into rough 3 cm cubes and place on a tray lined with cling film. Refrigerate.
- Rinse the fine bulgur under cold water, then submerge in cold water for 15 minutes to soften slightly. Drain through a fine sieve, then wrap in a clean kitchen towel and squeeze out as much moisture as possible — the bulgur must be nearly dry. Spread on a plate and refrigerate while you prepare the meat.
- Place the chopped onion, fresh basil, and flat-leaf parsley in a food processor. Pulse 6–8 times until finely minced but not puréed. Scrape down the sides. Add the chilled lamb cubes and pulse again in 5-second bursts, scraping down between each burst, until the mixture is a smooth, slightly sticky paste — about 8–10 pulses total. Do NOT over-process; the texture should remain slightly coarse, not completely homogenous.
- Transfer the lamb paste to a large chilled bowl (rest the bowl over a larger bowl of ice to keep the mixture cold). Add the squeezed bulgur, ground allspice (or 7-spice blend), ground cinnamon, black pepper, salt, dried marjoram, and cayenne. Begin kneading the mixture by hand, gradually incorporating the ice-cold water one tablespoon at a time. Work the mixture for 3–4 minutes until it is uniform, smooth, and holds its shape. The final texture should resemble a silky, dense pâté. Taste a tiny amount and adjust seasoning.
- To serve, moisten your hands with cold water and press portions of the kibbeh nayyeh onto individual plates or a large communal platter, using your fingertips to create a flat patty roughly 1.5 cm thick. Use your thumb or the back of a spoon to score a traditional diamond (crosshatch) pattern across the surface. Make a shallow central indent with your thumb.
- Generously drizzle extra-virgin olive oil over the top so it pools in the scored grooves and the central indent. Scatter a pinch of chilli flakes over the surface. Garnish with a sprig of fresh mint. Serve immediately alongside thin slices of raw white onion, fresh mint, green olives if using, and warm pita or fresh white bread. Kibbeh nayyeh must be eaten the same day it is prepared — never store leftovers.
